The 2022 growing season was a warm to hot growing season, with quite fast ripening and a few rain events in the growing season and a high humidity and a mild bird pressure.  Overall harvest was a bit earlier than usual and the resultant wines have ripe juicy flavours, with fine tannin and moderate length of flavours.  Overall 2022 is a high quality solid vintage with great varietal flavours and concentration, winemakers had to focus on freshness if any of this was to be retained.

A block of shiraz was found in Northern Margaret River which was available to make the intended wine style.  The site has lovely lateritic gravel loams and is managed sustainably.  The Attollo Nouveau Syrah was handpicked on a bviodynamic fruit day on 15/3/22.  The vineyard was strangely late to ripen in a warmer year, which can happen as when it gets very hot, vines balance this by shutting down.  For this wine, we were looking for fresh fruit flavours and balanced acidity to make a light easy drinking red.

The fruit was loaded into stainless steel open fermenters under a permanent layer of co2 gas.  After a few days, wild ferment started and it began protecting itself but I still ran a low flow rate of co2 to keep it safe.   After 30 days the shiraz was whole bunch pressed (like a chardonnay) to stainless steel tank and ferment then continued for another 30 days.  After this time, the Nouveau was sent to stainless steel drums for some cold stabilisation on lees for 16 weeks.  The wine was then carefully gravity racked and stabilised with a small so2 addition.  The plan is to bottle this fresh on demand.  A true Attollo family wine- we all bottled the first release, gravity fill from drum and sealed with a cork.  Finished with pink wax and a label- all done by hand.

Taste [29/10/22]

The wine has a pale pink hue and faint pink red centre

Aromas of raspberry, cherry and floral spice intermeld with hints of rose petal and banana esters.

Serve this wine chilled and savour in its freshness and fine minerality.  This wine has a light frame, with a juicy refreshing moderate weight,  and fine talcy tannins to afford a dry appertising finish.

The use of carbonic maceration for 30 days has yielded an assorted mix of berry fruit and fruit floral esters, which have been preserved with wild fermentation in  stainless steel and extended lees storage before storage in small stainless steel drums for bottle on demand to capture this zesty fresh youthful wine.

Bottled by hand with a cork… this wine is intended for early consumption- cellar for one year maximum.  Please keep cool and laying down or upside down to keep cork wet for storage.
